Ingredients
2 cups
Flour
1/2 teaspoon
Baking powder
1/2 teaspoon
Salt
1/2 cup
Unsalted butter (room temperature)
3/4 cup
Sugar (plus a bit more for later)
Zest from 1 lemon
1/2 teaspoon
Vanilla
2 tablespoons
Milk

Turnips (cooked and mashed)
FOR THE GLAZE (OPTIONAL):
1/2 cup
Powdered sugar
2 tablespoons
Milk
A little bit of lemon zest
Step by Step Instructions
- Wash, then boil, steam, or roast, then peel the turnips. Preheat oven to 375 degrees, and line 2 baking sheets with parchment paper.
- Whisk the flour, baking powder, and salt together in a medium sized bowl.
- Beat the butter and sugar together by hand or with a stand mixer. Once combined, beat in the milk and vanilla. Mix in the dry ingredient mixture, then stir in the cooked turnips. Put the dough into the fridge for 1 hour.
- Using a tablespoon or cookie scooper, scoop out small balls of dough and roll them in sugar. Place the dough balls on the prepared cookie sheets about 2 inches apart. Slightly flatten each one and let cook for 13 to 16 minutes.
- To make the glaze: Whisk the powdered sugar, milk, and lemon zest together until well combined. Spread the glaze over the cooled cookies with a knife or pastry brush and allow to set for 5 minutes.
