Asparagus & Shrimp Dumplings

Serves: makes 18 to 24 dumplings


Ingredients
8 ounces Shrimp (peeled & deveined)
2 teaspoons Cornstarch
2 teaspoons Fresh ginger (minced)
2 teaspoons Sesame oil
1 teaspoon Soy sauce
2 teaspoons Dry vermouth
1/2 cup Asparagus (thinly sliced & trimmed)
3 tablespoons Chives (chopped)
1/2 teaspoon Salt
1/4 teaspoon Sugar
Dumpling wrappers

Step by Step Instructions
  1. Puree the shrimp, cornstarch, ginger, sesame oil, dry vermouth, and soy sauce in a food processor until smooth.
  2. Transfer the shrimp mixture into a small bowl and stir in the asparagus, chives, salt, and sugar until well combined.
  3. Spoon 2 teaspoons of filling into a dumpling wrapper. Dampen the edges of the wrapper, fold it over into a half-moon shape, and crimp the edges. Repeat until all the wrappers are filled.
  4. Cook the dumplings in a steamer basket over simmering water for 6 minutes and serve with soy sauce for dipping.
